You might see the word pudding and be fooled into thinking that this chia treat isn’t all that healthy… Quite the opposite, this healthy snack is absolutely loaded with protein, fiber and healthy fats!
Simply leave to set in the fridge and you’ll find it has taken on an incredible pudding texture and flavour. From here on our there is so much flexibility for toppings that you can throw practically anything at it, we went for a combinations of nuts, seeds and fruit.
We know we’ve called it a breakfast pudding but you could eat this little pud at any time of the day whether it’s the first meal of the deal, a lunch time pick me up to reenergize you or as a healthy dessert after a long day.

Step 1
Stir chia seeds and coconut milk together.
Cover and refrigerate overnight or for a minimum of 2 hours -
Step 2
Stir through adding a splash of plantmilk if required, ensuring you remove any lumpy bits
