Step 1
Preheat oven to 180 and line a cake tin with parchment paper

In a large bowl, whisk together milk and vinegar- let it set of 2-3 minutes. Whisk in oil and vinegar, then add sugar a ¼ cup at a time. Whisk until dissolved

In a separate bowl, mix together flour, baking powder, baking soda, salt and cardamom

Whisk in dry ingredients into wet ingredients ¼ cup at a time. The consistency should be thick and creamy but not too stiff.

Pour cake batter into the tin and bake for 30-35 minutes or until a knife comes out clean from the centre of the cake

Once cooled, slice and add a little more lemon zest to serve.
